- Grate carrot, slice scallions, wipe, core and thinly slice the pears; set them aside.
- In a bowl, combine scallions, pears and cabbage then mix well. Line a serving dish with lettuce leaves then put cabbage and pear mixture in center. Sprinkle grated carrot in center of the cabbage to form a domed pile.
- For dressing, put together vinegar, pear juice, chives, mustard and olive oil with seasoning according to your taste.
- Pour the dressing over salad. Serve immediately.
