- Heat the oven at a temperature of 400?F. Put together the baking soda, baking powder, flours and salt in a bowl and mix them well. In another bowl; whisk eggs and then add the sugar, applesauce and oil. Mix them well.
- Make a well in the center of the flour mixture. Ladle the egg mixture in the well, stir until slightly lumpy. Then add the rhubarb and fold them.
- Take a 4-oz muffin tin and line it with the paper liner. Place 2 tbsp of the batter in each cup and then place the cups in the oven and bake for 15 minutes until done.
