- Remove the seeds off the jalapeno pepper and then mince it. Take a small skillet, heat the oil in it at a medium heat. Then add the mustard and cook a while. Lower down the heat, put the cashews in the skillet and cook for 30 seconds or until golden brown.
- Put the pan away from the heat, and then add the lime juice, coriander, jalapeno chili, turmeric and salt. Combine the mixture with the cooked rice, toss well to combine.
- Serve 'Rice Pilaf' as a main dish.
