- Cut tomatoes in half, chop parsley and set aside.
- Put tomatoes on foil-lined baking tray. Spread with canola oil. Take a small bowl now; add red onion, pepper, garlic and bread crumbs. Stir and combine the ingredients. Spread the mixture on cut sides of tomatoes.
- Preset oven to 350*F. Roast tomatoes for 40 minutes or until become tender. Sprinkle with herbs on top of tomatoes and serve hot at once.
