- Separate one fl oz of milk in a small bowl, to glaze scones.
- Sift the flour with salt, baking soda and cream of tartar in a separate bowl. Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs. Stir in sugar and add just enough milk to form soft dough.
- Turn the dough out on a lightly floured surface and knead it gently until smooth. Roll out to 3/4 inch thick and cut into 2 inch circles and place them on baking tray. Now use brush to glaze with 1 fl oz milk.
- Bake now for 10 minutes on high temperature then shift to a wire rack to cool. Serve scones with salted butter and cream or use jam.
