- Peel and grate the ginger; remove the bones from the fish; crush the garlic cloves. Put together the ginger, garlic, orange juice, soy sauce and orange rind in a bowl.
- Place the fish fillets in a large shallow dish, add the ginger and garlic mixture to the fish. Cover and let refrigerate for 30 minutes to develop the taste. Preheat the grill and line the rack with the foil.
- Reserve the fish marinade and put the fish on the rack. Grill for 5 minutes and basting with the marinade while cooking. Transfer the fish to the plates.
