Ingredients

  • Palm kernel oil | 0.50 tablespoon
  • Spices, cumin seed | 0.50 tsp, whole
  • Onions raw | 0.25 cup, chopped
  • Corn, sweet, yellow, frozen, kernels cut off cob, unprepared | 0.25 cup
  • Tomato sauce | 1.00 cup
  • Brown rice, medium grain, cooked | 2.00 cup
  • Cilantro, Fresh, Chopped | 0.25 cup
  • Lime juice, raw | 1.00 tbsp

Instructions

  1. Chop the coriander leaves and set aside.
  2. Now in a large wok, heat oil on medium flame, add onions, corn and cumin seeds then saute for 2 minutes.
  3. Then add tomato sauce, keep mixing and reduce heat to low. Let it simmer for 5 minutes.
  4. Finally add in cooked rice, lime juice and chopped coriander.
  5. Serve hot.
