- Grate Cheddar cheese and set aside.
- Wash, pare and dice potatoes, and chop the onions.
- Bring water and salt to boiling in a saucepan, add potatoes with onion.
- Cover and cook 10 min. Uncover and continue cooking slowly until almost all the water is evaporated.
- Turn occasionally and mash gently with a spoon.
- Remove from heat.
- Blend in grated cheese, milk and pepper.
- Heat and stir until cheese is melted.
- Sprinkle some cayenne pepper on top if desired.
- Serve Hot.
