Ingredients

  • Margarine, regular, 80% fat, tub, without salt | 1.00 cup
  • Brown sugar | 1.00 cup packed
  • Egg, whole, raw | 1.00 medium
  • Self-rising enriched wheat flour | 1.00 cup
  • Low sodium baking powder | 1.00 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Spices, nutmeg, ground | 0.25 tsp
  • Spices, cloves, ground | 0.25 tsp
  • Whole wheat, rolled oats, presweetened, with pecans, cereal | 2.00 cup 1 NLEA serving
  • Carrots, raw | 2.00 cup grated
  • Dry roasted mixed nuts, no peanuts, no salt | 0.75 cup
  • Seedless golden raisins | 0.25 cup, packed

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In large mixing bowl, blend margarine and brown sugar until fluffy. Add egg and vanilla extract then blend.
  3. Add the flour, baking powder, cinnamon, nutmeg, cloves, oats, carrots, nuts and raisins. Mix until combined.
  4. Drop rounded tablespoons of mixture on greased baking sheets and bake for 13-15 minutes.
  5. Cool for 5 minutes on the baking sheet and then transfer to a wire rack to cool completely
