  • Broccoli flower clusters, raw | 2.00 cup flowerets
  • Onions raw | 0.33 cup, chopped
  • Cayenne pepper | 0.25 tsp
  • Garlic, raw | 0.13 whole head
  • Olive oil | 2.00 tablespoon
  • Cheese, parmesan, grated | 2.00 tbsp

  1. Cook broccoli in a little boiling salted water, covered, in a small saucepan for 12 minutes or until tender. Drain well.
  2. Heat oil in a small skillet, add cayenne pepper, onion and garlic, cook for 10 minutes or until onion is soft.
  3. Put broccoli, onion mixture and Parmesan cheese in a blender. Blend until smooth.
  4. In a small serving bowl, transfer the mixture and serve it either at room temperature or chill for few hours!
