Ingredients

  • White potatoes, raw | 2.00 potato large 3 to 4-1/4" dia
  • Oil, sunflower, linoleic less than 60% | 1.00 tsp
  • Onions raw | 1.00 medium 2-1/2" dia
  • Ginger root, raw | 1.00 slices 1" dia
  • Spices, cumin seed | 1.00 tsp powdered
  • Spices, coriander | 1.00 tsp
  • Spices, turmeric, ground | 0.50 tsp
  • Spices, garlic powder | 0.50 tsp

Instructions

  1. Preheat oven at 375*F.
  2. Finely chop onions, grate ginger and grind coriander seeds to powder.
  3. Thoroughly wash potatoes and make sure there is no dirt on them.
  4. Using a fork. prick the potatoes then bake them for 1 hour to soften.
  5. Cut potatoes into two halves and scoop out the soft flesh.
  6. Heat oil in a saucepan, add onions and saute a little.
  7. Add ginger, cumin, coriander and turmeric. Stir fry for 2 minutes then put potato flesh into the saucepan.
  8. Cook for another 2 minutes then adjust the seasoning.
  9. Fill this flesh mixture into potato skin shells, place some yogurt above, garnish with parsley and serve!
