Ingredients

  • Okra, raw | 1.25 cup
  • Palm kernel oil | 1.00 tablespoon
  • Onions raw | 1.00 medium 2-1/2" dia
  • Tomatoes, red, raw | 1.75 cup, chopped or sliced
  • Peppers, jalapeno, raw | 1.00 pepper
  • Salt | 0.50 tsp
  • Spices, pepper, black | 0.25 tsp, ground

Instructions

  1. Rinse okra in a colander under hot water.
  2. Heat oil in a 10-inch heavy skillet over moderately high heat.
  3. Saute onion for about 3 minutes.
  4. Add tomatoes (including juice) and chili, and boil.
  5. Stir the mixture for 8 minutes.
  6. Add okra and cook, gently stirring, until okra is tender, about 5 minutes.
  7. Stir in salt and pepper and discard the chili.
