- Crush the garlic cloves; Cut the potatoes into 8 wedges and then place them in a saucepan full of cold water. Preheat the oven at a temperature of 400?F. Place the saucepan on the stove and bring to boil. Lower down the heat and then simmer for 10 minutes until softened.
- Drain the wedges on kitchen paper. At the same time, put together the coriander, allspice, garlic, oil and paprika in a roasting tin, seasoning and then place the tomatoes in the pan and shake well to coat.
- Now place the pan in an oven and then roast coated wedges for 20 minutes, turning them occasionally until brown. Transfer to the serving plates and garnish with the coriander.
- Serve Spicy Potato Wedges hot with the Chili sauce.
