Ingredients

  • Spices, allspice, ground | 1.00 tsp
  • Garlic, raw | 2.00 Tbsp
  • Olive oil | 2.00 tablespoon
  • Spices, coriander | 1.00 tbsp
  • Spices, paprika | 1.00 tbsp
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Russet potatoes, raw | 2.00 potato large 3" to 4-1/4" dia

Instructions

  1. Crush the garlic cloves; Cut the potatoes into 8 wedges and then place them in a saucepan full of cold water. Preheat the oven at a temperature of 400?F. Place the saucepan on the stove and bring to boil. Lower down the heat and then simmer for 10 minutes until softened.
  2. Drain the wedges on kitchen paper. At the same time, put together the coriander, allspice, garlic, oil and paprika in a roasting tin, seasoning and then place the tomatoes in the pan and shake well to coat.
  3. Now place the pan in an oven and then roast coated wedges for 20 minutes, turning them occasionally until brown. Transfer to the serving plates and garnish with the coriander.
  4. Serve Spicy Potato Wedges hot with the Chili sauce.
