Ingredients

  • Onions raw | 1.00 cup, chopped
  • Home prepared, chicken stock | 0.20 cup
  • Spinach, raw | 1.00 cup
  • Cottage cheese with vegetables, low fat | 1.00 cup
  • Cheddar cheese | 0.50 cup, shredded
  • Fat free liquid egg substitute | 0.25 cup
  • Parsley, raw | 3.00 tbsp
  • Fresh dill weed | 0.50 tbsp
  • White rice long grain enriched cooked | 3.00 cup

Instructions

  1. Preheat oven to 375.
  2. Spray 2 qt casserole dish with nonstick spray.In large skillet, saute onions and stock until soft.
  3. Add spinach and cook over low heat until the spinach is wilted and all the liquid is evaporated, stir constantly.
  4. In large bowl, combine the remaining ingredients.Fold in spinach mixture.
  5. Spoon into prepared dish and bake 25 min.
  6. Serve.
