Ingredients

  • Spring onions | 1.00 small 3" long
  • Olive oil | 1.00 tablespoon
  • fresh pineapple, raw | 0.50 fruit
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Pork leg ham, rump half, raw | 1.00 lb
  • Ginger root, raw | 0.50 tsp
  • Vinegar, distilled | 1.00 tsp
  • Granulated sugar | 1.00 tsp
  • Soy sauce made from soy and wheat shoyu | 2.00 tsp
  • Home prepared, chicken stock | 0.50 cup
  • Unsweetened pineapple juice, without ascorbic acid | 4.00 fl oz
  • Tomatoes, red, raw | 1.00 small whole 2-2/5" dia
  • whole grain yellow cornflour | 1.00 tsp

Instructions

  1. Chop the scallion; remove the seeds off the tomatoes and then chop it; combine the corn flour with the little water; cut the beef into thin strips and season them; peel the pineapple and then remove the brown eyes from the flesh, then cut the flesh into round slices and remove the core.
  2. Heat the wok and then heat the oil in it. Now put the meat, ginger and scallions in the wok and stir-fry until colored. Discard the any excess fat.
  3. Now put the stock, sauce, vinegar, sugar, and juice in the wok, stir. Then put the tomatoes and pineapple, lower down the heat and cook for a few minute.
  4. Now gradually add the corn flour mixture to the wok, stirring continuously until it reaches your required consistency.
  5. Transfer to the serving plates and serve 'Stir-Fried Beef With Pineapple' with the rice.
