Ingredients

  • Self-rising enriched wheat flour | 2.00 cup
  • Salt | 0.50 tsp
  • Low sodium baking powder | 2.00 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Spices, allspice, ground | 0.25 tsp
  • Spices, nutmeg, ground | 0.50 tsp
  • Powdered sugar | 1.00 cup sifted
  • Egg, whole, raw | 3.00 medium
  • Whole milk with added vitamin D | 0.67 cup
  • Canned strawberries in heavy syrup | 1.00 cup
  • Confectionary shortening | 0.50 cup

Instructions

  1. Sift together the flour, salt, baking powder and spices.
  2. In a mixing bowl, cream shortening and sugar until light.
  3. Beat in the eggs then drained canned strawberries.
  4. Slowly beat in dry ingredients, alternating with milk until batter is smooth.
  5. Pour batter into lined cupcake molds and bake at 350°F for 25-30 minutes.
  6. Cool the cupcakes, decorate with strawberry frosting and serve.
