Ingredients

  • Tomatoes, red, raw | 4.00 medium whole 2-3/5" dia
  • Olive oil | 2.00 tsp
  • Spring onions | 8.00 medium 4-1/8" long
  • Fresh spearmint | 3.00 tbsp
  • Parsley, raw | 2.00 tbsp
  • Dried pine nuts | 1.50 oz 167 kernels
  • Seedless raisins | 1.50 oz
  • White rice, long grain, cooked | 4.50 cup
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash

Instructions

  1. Cut all tomatoes into two halves, dig out its seeds making it hollow from inside then keep them upside down on a paper towel in order to drain any excessive juice.
  2. Meanwhile, finely chop spring onions, mint and parsley.
  3. Now turn the tomatoes and sprinkle seasonings at insides as per your taste.
  4. Toss rice, spring onions, mint, parsley, pine nuts and raisins together till mixed well.
  5. Fill a spoonful of this rice mixture into the tomato halves.
  6. Sprinkle over the olive oil and grill these filled tomatoes on medium flame for 10 minutes or until tender but not overcooked.
  7. Then set them in a serving platter and serve at once.
