Ingredients

  • Onions raw | 1.00 small
  • Garlic, raw | 4.00 Tbsp
  • Palm kernel oil | 2.00 tablespoon
  • Pork, tenderloin, separable lean only, raw | 0.75 lb
  • Fish sauce | 2.00 tbsp
  • Granulated sugar | 1.00 tsp
  • Peppers, sweet, red, raw | 1.00 medium approx 2-3/4" long, 2-1/2 dia.
  • Cucumber, with peel, raw | 0.50 cucumber 8-1/4"
  • Tomatoes, red, raw | 2.00 plum tomato
  • Spring onions | 2.00 medium 4-1/8" long
  • fresh pineapple, raw | 0.75 cup, chunks
  • Spices, pepper, black | 1.00 dash

Instructions

  1. Slice the onion; finely slice the garlic cloves; seed and dice the sweet pepper; slice the pork into thin strips; seed and slice the cucumber; cut the tomatoes into wedges; cut the scallions into short length.
  2. In a wok, heat the oil and then fry the garlic until golden, then put pork strips and stir-fry for about 5 minutes, and then onion. Season the meat with the fish sauce, sugar and pepper.
  3. For about 4 minutes, stir the mixture until the meat is done. Then add the tomatoes, pineapple, sweet pepper, cucumber scallions and a few tbsp of water.
  4. Stir-fry for 4 minutes more.
  5. Garnish with the coriander leaves and scallions.
  6. Serve hot.
