Ingredients

  • Baked skinless sweet potato | 1.00 cup, mashed
  • Bananas, raw | 0.50 cup, mashed
  • Brown sugar | 2.00 tbsp packed
  • Egg, yolk, raw | 2.00 large
  • Salt | 0.50 tsp
  • Seedless raisins | 0.25 cup, packed
  • Granulated sugar | 3.00 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Low fat milk, with vitamin A and D | 1.00 cup

Instructions

  1. In medium bowl, stir together sweet potato and banana.
  2. Add milk, blending well.
  3. Add brown sugar, egg yolks, and salt, mixing thoroughly.
  4. Spray 1-quart casserole with nonstick cooking spray.
  5. Transfer sweet potato mixture to casserole dish.
  6. Combine raisins, sugar, and cinnamon.
  7. Sprinkle over top of sweet potato mixture.
  8. Bake in preheated 325º F oven for 40-45 minutes, or until knife inserted near center comes out clean.
