  • Baked sweet potato | 1.00 cup
  • Bananas, raw | 0.50 cup, mashed
  • Yogurt, plain, skim milk | 1.00 cup 8 fl oz
  • Brown sugar | 2.00 tbsp packed
  • Egg, yolk, raw | 2.00 large
  • Salt | 0.50 tsp
  • Seedless raisins | 0.25 cup, packed
  • Granulated sugar | 1.00 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Cooking spray | 0.50 spray , about 1/3 second 1 NLEA serving

Instructions

  1. In a medium bowl, stir together sweet potato and banana. Add milk, blending well.
  2. Add brown sugar, egg yolks, and salt, mixing thoroughly.
  3. Spray a 1-quart casserole with non-stick spray coating.
  4. Transfer sweet potato mixture to casserole.
  5. Combine raisins, granulated sugar, and cinnamon; sprinkle over top of sweet potato mixture.
  6. Bake in a preheated 300° F oven for 40 minutes
