  • Feta cheese | 1.00 oz
  • Olive oil | 1.00 tsp
  • Spices, basil, dried | 1.50 tsp, ground
  • Capers, canned | 1.50 tbsp, drained
  • Tomatoes, red, raw | 2.00 plum tomato
  • French rolls | 1.00 roll

  1. Cut french roll into 8 slices, chop tomatoes and capers, set them aside. Preheat oven at a temperature of 350°F.
  2. Put the slices in single layer on an un-greased baking sheet. Bake for 15 minutes or until golden brown then let cool completely.
  3. Meanwhile, in a small bowl put capers, tomatoes, basil and olive oil, toss to mix well.
  4. Equally spoon the mixture on each slice and sprinkle cheese on top and then top with the spinach leaves before serving.
