- Cut french roll into 8 slices, chop tomatoes and capers, set them aside. Preheat oven at a temperature of 350°F.
- Put the slices in single layer on an un-greased baking sheet. Bake for 15 minutes or until golden brown then let cool completely.
- Meanwhile, in a small bowl put capers, tomatoes, basil and olive oil, toss to mix well.
- Equally spoon the mixture on each slice and sprinkle cheese on top and then top with the spinach leaves before serving.
