Tomato and Fresh Basil Soup

Ingredients

  • Olive oil | 1.00 tablespoon
  • Butter salted | 2.00 tbsp
  • Onions raw | 1.00 medium 2-1/2" dia
  • Tomatoes, red, raw | 2.00 slice, thick/large 1/2" thick
  • Garlic, raw | 1.00 Tbsp
  • White wine | 4.00 fl oz
  • Tomato paste, canned without salt | 2.00 tbsp
  • Fresh basil | 2.00 tbsp, chopped
  • heavy whipping cream | 0.67 cup, whipped
  • Spices, pepper, black | 1.00 dash
  • Salt | 1.00 dash
  • Drinking tap water | 1.00 fl oz

Instructions

  1. Finely chop the onions, tomatoes and garlic, set aside.
  2. In a large sauce pan, heat oil and butter, add chopped onions, stir occasionally for 5 minutes, add chopped tomatoes along with garlic.
  3. Then add stock, water, wine and tomato paste.
  4. Stir well then season with salt and pepper.
  5. Bring to boil and cover, let it simmer for 20 minutes, keep stirring occasionally.
  6. In a blender, pour in the soup with fresh basil and process until smooth.
  7. Press through a sieve in a sauce pan.
  8. Now add cream and keep stirring, do not boil as this will curdle the cream.
  9. Check the seasonings at this step.
  10. Pour into bowls and garnish with fresh basil to serve!
