  • Spices, pepper, black | 1.00 dash
  • Salt | 1.00 dash
  • Parsley, raw | 1.00 tbsp
  • Lemon juice, raw | 2.00 tbsp
  • Cucumber, peeled, raw | 0.50 cup, pared, chopped
  • green onions tops | 2.00 stalk
  • Hot green chilli peppers, raw | 1.00 pepper
  • Tomatoes, red, raw | 6.00 medium whole 2-3/5" dia
  • Cilantro, Fresh, Chopped | 8.00 sprigs

Instructions

  1. Chop coriander sprigs, green onions, and green chilies after removing the seeds then set aside.
  2. Cut a small cross in the stalk end of each tomato. Place in a bowl and cover with boiling water.
  3. After 30 second or as soon as the skin splits, drain and plunge into cold water. Gently remove the skins. Quarter the tomatoes, remove all seeds and dice its flesh.
  4. Mix together all the ingredients and transfer to a serving bowl. Chill for 1-2 hours before serving.
