Ingredients

  • Potato, flesh and skin, raw | 4.00 Potato medium 2-1/4" to 3-1/4" dia
  • Onions raw | 1.00 large
  • Garlic, raw | 2.00 Tbsp
  • Peas, green, raw | 1.00 cup
  • Low-fat parmesan cheese, grated | 3.00 tbsp
  • Olive oil | 6.00 tablespoon
  • Egg, whole, raw | 8.00 small
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Spices, thyme, dried | 0.50 tsp, leaves
  • Spices, oregano, dried | 2.00 tsp, leaves
  • Sauce, pepper or hot | 0.25 tsp

Instructions

  1. Thinly slice the potato and onion. Chop garlic cloves and keep aside.
  2. In a deep, non-stick pan, heat 4 tbsp of oil, stir fry onion and potato slices for 8 to 10 minutes untill tender.
  3. Add garlic, thyme, salt and black pepper. Cook for another 2 minutes then remove from heat.
  4. Preheat oven to 300*F. Grease a 8x12 inch baking dish lightly.
  5. Beat eggs along with oregano, salt and hot sauce. Add peas and stir.
  6. Arrange stir-fried potatoes and onions in the baking dish and pour egg mixture from above. Bake for 40 minutes or till set and cooked through.
  7. Sprinkle Parmesan and bake for 5 more minutes then let cool on room temperature.
  8. Cut into 2 inch squares, garnish with chopped basil and serve.
