Ingredients

  • Spring onions | 4.00 medium 4-1/8" long
  • Tomatoes, red, raw | 1.50 cup cherry tomatoes
  • Sweet Yellow peppers | 1.00 pepper, large 3-3/4" long, 3" dia
  • Celery, raw | 3.00 stalk, medium 7-1/2" - 8" long
  • Cucumber, with peel, raw | 1.00 cucumber 8-1/4"
  • Radishes, raw | 1.00 cup slices
  • Lemon juice, raw | 3.00 tbsp
  • Olive oil | 3.00 tablespoon
  • Tuna, canned in oil | 7.00 oz
  • Parsley, raw | 2.00 tbsp
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash

Instructions

  1. Thinly slice the scallions, halve tomatoes, cut cucumber, radish, sweet pepper and celery into small cubes.
  2. Take a large, shallow dish and put tuna, cucumber, radish, scallions, tomatoes, sweet pepper and celery.
  3. Then put lemon juice in a bowl and whisk in the oil and seasoning.
  4. Add the dressing to vegetables and toss to coat then set aside for 15 minutes.
  5. Arrange lettuce leaves on a plate and put the salad in center.
  6. Garnish with twisted lemon rind.
  7. Serve chilled or as it is.
