- Drain and rinse lima beans, crush garlic clove, finely chop the onion then set all of them aside.
- Take a medium saucepan, heat olive oil in it and saute onion at low heat until soft then put garlic to cook for another minute.
- Add water, beans and tomato paste. Heat to give it a boil, keep stirring occasionally, cook for about two minutes.
- Now add parsley, vinegar and basil and stir to combine them completely. Add black pepper to taste and give it a stir.
- Serve it over toasted bread.
