Ingredients

  • Olive oil | 1.00 tsp
  • Peppers, sweet, red, raw | 1.00 medium approx 2-3/4" long, 2-1/2 dia.
  • Onions raw | 1.00 medium 2-1/2" dia
  • Garlic, raw | 2.00 minced tbsp
  • Tomatoes, red, raw | 1.00 medium whole 2-3/5" dia
  • Spices, pepper, black | 1.00 tbsp, ground
  • Zucchini squash, with skin, raw | 2.00 medium
  • Sweet Yellow peppers | 1.00 pepper, large 3-3/4" long, 3" dia
  • French bread | 4.00 slice, medium 4" x 2-1/2" x 1-3/4"

Instructions

  1. Halve sweet peppers, garlic cloves and halve tomato as well, slice onion, fennel bulb, zucchini and cut bread into half.
  2. Use oil to brush broiler and heat it up. Warm both side of bread under broiler.
  3. Add sweet pepper, fennel to the grill (when it’s hot), cook it for 4 minutes, add onion, zucchini and cook 5 minutes more until all vegetables are tendered.
  4. Scrub garlic halves, tomato halves over the bread, place bread on serving plate, put grilled vegetables top of bread, sprinkle olive oil, salt and pepper to taste.
  5. Decorate with sage leaves and serve.
