  • White mushrooms raw | 0.25 cup, pieces or slices
  • Peppers, sweet, red, raw | 1.00 cup, chopped
  • Mayonnaise, low sodium, low calorie | 0.25 cup
  • Lemon juice, raw | 0.50 fl oz
  • green onions tops | 2.00 tbsp
  • Salt | 1.00 tsp
  • Lettuce, red leaf, raw | 2.00 cup shredded
  • Skinless chicken breast, raw | 2.00 breast, bone and skin removed

  1. In a large bowl, mix the chicken (cut in to strips) ,mushrooms, peppers, mayonnaise, lemon juice, green onions, mix well.
  2. Coat a small baking sheet with non-stick spray.
  3. Spread the chicken mixture on the tray.
  4. Sprinkle the mozarella over the chicken.
  5. Place in the broiler, and broil about 4 inches from the heat until the chicken is warmed through, about 10 minutes.
  6. Place the lettuce on a large dinner plate.
  7. Top with the hot chicken mixture and garnish with the lemon slices.
