Ingredients

  • Walnut oil | 2.00 tbsp
  • Sundried tomatoes in oil | 1.00 cup
  • Spinach, raw | 1.00 package 10 oz
  • Onions raw | 1.00 large
  • English walnuts | 0.25 cup, chopped
  • Salt | 1.00 dash
  • Cilantro, Fresh, Chopped | 1.50 oz

Instructions

  1. Chop the spinach and tomatoes, slice the onions, set aside.
  2. In a large heavy based frying pan, heat some oil.
  3. Then add in the tomatoes, chopped spinach, tomatoes and onions, then add in chopped walnuts.
  4. Stir well and season to taste, cook for another 1 minute.
  5. Serve the warm salad on to a platter and sprinkle with chopped coriander.
