- Chop the spinach and tomatoes, slice the onions, set aside.
- In a large heavy based frying pan, heat some oil.
- Then add in the tomatoes, chopped spinach, tomatoes and onions, then add in chopped walnuts.
- Stir well and season to taste, cook for another 1 minute.
- Serve the warm salad on to a platter and sprinkle with chopped coriander.
