Ingredients

  • Olive oil | 1.00 tablespoon
  • Onions raw | 0.50 cup, chopped
  • Carrots, raw | 1.50 cup chopped
  • Minced Ham | 0.50 lb
  • Split peas raw | 1.50 cup
  • Vegetable broth | 2.50 cup
  • Spices, nutmeg, ground | 0.12 tsp
  • Spices, pepper, black | 1.00 dash
  • Salt | 1.00 dash
  • Low fat milk, with vitamin A and D | 1.00 quart

Instructions

  1. In a large stock pot, heat oil.
  2. Add onions and carrots and sauté vegetables until tender.
  3. Add ham and sauté until heated through.
  4. Puree prepared split peas in blender or food processor, adding vegetable broth ½ cup at a time as needed to get pureed texture.
  5. Add puréed peas to the stock pot, along with milk, any remaining vegetable broth, nutmeg, pepper and salt.
  6. Continue to heat until desired temperature is reached.
  7. Serve.
