New Years Lucky Dip
It’s a New Year’s Day tradition to eat black-eyed peas on New Year’s Day for good luck. Serve this easy, healthy recipe for an appetizer, side dish with fish, chicken or pork or on top of a bed of arugula.
- Combine black-eyed peas, tomatoes, cilantro, lime juice and olive oil, mixing well. Chill at least 1 hour before serving. Serve with fresh vegetables, crackers, tortillas chips or on a bed of lettuce, if desired.
